Arugula and Goat Cheese Salad

This salad pairs the bite of peppery arugula with a bright and smooth goat cheese. Add walnuts and the crisp sweetness of a Honeycrisp apple and this dish shames any standard side salad.
Ingredients
4 cups arugula
1 and 1/2 cups cherry tomatoes, halved
1 Honeycrisp apple, diced (Fuji, Granny Smith or any crisp apple will do as well )
1/2 cup walnuts
2 oz. goat cheese, crumbled
salt and pepper
extra virgin olive oil
balsamic vinegar
Method
Toss arugula, tomatoes and apple in a large bowl. Crumble goat cheese and walnuts over both salads (I scrape the cheese with a fork to get smaller pieces rather than large chunks). Sprinkle each with salt and pepper, drizzle with just a bit of very good extra virgin olive oil and balsamic vinegar.
If you'd like to pre-portion this along with the soup, store the salad undressed so the greens don’t wilt.
