chicken skewers

These traditional kebabs make for terrific barbecuing, and fresh seasonal vegetables add a local zing. For more grilling recipes, see our Grilling Guide.
Serves four

2 lbs chicken, cut into bite-sized pieces (to be placed on skewers)
1/2 tsp cumin
1 clove garlic, minced
4 Tbsp olive oil
1 1/2 Tbsp lemon juice
pinch of saffron
1/8 tsp salt
Curry Dipping Sauce
1/2 cup sour cream or plain yogurt
1 Tbsp curry power (or to taste)

Grilling vegetables
Cubes of fresh, seasonal veggies from your farmers' market, including onions, zucchini, tomatoes, mushroom, and bell peppers (make sure to have enough to equal the servings of chicken)

Mix saffron and salt. Combine with lemon juice until bright yellow. Add garlic, cumin, and oil. Marinade chicken in this mixture for at least two hours.
Alternate chicken with veggies on skewers and grill until chicken is completely cooked (check with a meat thermometer for internal temperatures of 170F).

Mix sour cream or yogurt with curry powder. Serve on skewers.
