Tomato and Basil Crostini

A perfect appetizer for a light, seasonal meal, these crostini explode with flavor when paired with grape tomatoes and basil fresh from the farmers' market.
- 10 grape tomatoes
- half a loaf of baguette, sliced into half-inch slices
- 2 oz. soft goat cheese
- 10 fresh, basil leaves
- 2 Tbsp olive oil salt and pepper
Preheat oven to 400 degrees. Slice bread and pour oil into small bowl. Use a brush to lightly brush each slice with oil on one side. Season the slices with salt and pepper the set, oil side up, on a foil-lined baking sheet. Place in the oven for 10 minutes or until slightly browned.
While the bread is toasting, cut grape tomatoes in half and clean basil leaves. Remove bread from oven and let cool. Once the bread is cool, spread goat cheese on oil side of toasts, add basil leaf and arrange grape tomato halves.
