Meal prepping was the only way I could get through night classes while working full time. On Sunday afternoon, I would make 5 servings of 2 recipes (one for lunch and the other for dinner) and split it out in containers for each day. By cooking one big recipe that covered several meals over the course of the week, I was able to save time, still eat healthy, and not break the bank. But sometimes I wasted a lot of food and money, too. I filled my containers to the brim. Or I would have too much of an ingredient left over that I didn’t know what to do with. Often, by Thursday I was so tired of what I had prepared that I wouldn’t finish the rest of the meals.
